Ingredients
Strawberries
4 medium - 1 1/4" diameter
Radish, Raw
4 medium - 3/4" to 1" diameter
Olive Oil
1-½ tablespoon
Zucchini
1 small
Baby Spinach
1 cup
Avocado
1 each
Red Onion
1 tablespoon
Lemon Juice
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper

Step 1
Peel the zucchini skin and discard. Peel the zucchini into wide strips and add to a mixing bowl. Thinly slice the onion and add to the bowl. Toss to combine.Step 2
Halve the strawberries, chop the radishes into small chunks and dice the avocado. Add to the bowl along with the baby spinach, season and toss everything together to combine.Step 3
Drizzle over the lemon juice and olive oil and set aside for 10 minutes to soften the vegetables a little before serving.
