Keto Sesame Kale Salad

This Tuscan kale salad is coated in a sweet tahini dressing with a hint of lemon and left to marinate and soften. The salad is topped with crunchy toasted sesame seeds to serve.

This makes a great side salad to grilled meat or crispy tofu.

Ingredients

  • Tahini

    Tahini

  • Olive Oil

  • Lemon Juice

  • Maple Flavored Syrup by Lakanto

  • Step 1

    Roughly tear the kale leaves and add to a large mixing bowl, discarding any tough stems.

    Crush the garlic and add to a small bowl along with the tahini, lemon juice, syrup, sesame oil and olive oil. Whisk together to combine.

    Drizzle the dressing over the kale and use your hands to thoroughly massage the marinade into the leaves for a minute or two. Set aside for ten minutes to soften the leaves.

    Whilst the leaves marinate, add the sesame seeds to a dry skillet over a low/medium heat and toast gently for 3-4 minutes until lightly golden.

    Toss the kale with the sesame seeds to serve.

    I love this salad!!!! I made it as a side dish one night for family and they just raved about how good it was!! Will definitely make again. :)
