Ingredients

  • Cauliflower Rice

  • Step 1

    In a skillet, combine the cauliflower rice, first amount of pepper, garlic powder, and soy sauce. Cook on medium-high heat until the cauliflower rice is well browned and slightly crispy for the “fried” effect.

    With the pan still on the heat, crack the egg into the cauliflower rice. Stir the egg until it is cooked through and roughly scrambled in the rice. Transfer the fried rice to your serving dish.

    Return the pan to the heat and pour in the olive oil. Roughly chop the chicken into 1-inch cubes, and toss them into the oil. Cook with the salt and pepper until the outside of the chicken is browned.

    Chop the broccoli, if necessary. Stir the broccoli into the chicken and continue cooking the ingredients. Once the chicken has completely cooked through and the broccoli is tender, toss in the Sriracha sauce. Make sure all the ingredients are coated.

    Turn off the heat, and transfer the chicken and broccoli to the top of your fried rice. Garnish with chopped green onion for serving.

    This was really good and the whole family loved it! I didn't have Sriracha but I added pepper paste to what hubby and I had. Will make again with more veg.

        We love this! I added a little more chicken and will cut them into smaller portions next time. I used coconut aminos instead of the soy. Cauliflower Rice came out perfectly.

            I added an extra 1/4 cauliflower and less soy sauce. Very good flavor. I did not add the salt.

                  I added an extra 1/4 cup of cauliflower and still felt the soy sauce was too much. Really good and will definitely be a repeat dish!

                    I should have used my own judgement when adding the soy sauce as I told myself, that's a lot. And it was, but it's still really good and a keeper. Next time I will add about a quarter of the soy sauce recommended.

                      Definitely salty and I find it’s far more accurate to add every ingredient rather than logging this as a recipe. Protein on this is high compared to the ingredients that I used. I used coconut amino‘s and only half of the amount suggested for soy sauce and this dish was still salty. RECOMMEND REDUCING SALT The first time you make it, you can always add later. Having said that this is delicious!

                                  I used another hot chili sauce instead, that was a little too spicy (200 000 SHU approx). Now my mouth burns and I can't drink any milk... Besides that, mostly good. Next time I'll try less soy sauce.

                                        This was awesome! I used red chili paste and red crushed peppers because I love spice! Wow, my hubby who is very picky didn’t know it wasn’t really fried rice! So good!
