Keto Peanut Butter Puff Cereal

Our Keto peanut butter cereal is chock full of natural creamy peanut butter. The peanut butter is mixed together with vanilla extract, sea salt, vanilla extract, coconut oil, almond flour, and coconut flour. The dough is rolled into small peanut butter puffs and baked until nicely golden brown. The cereal can be eaten as a snack or in a bowl with your choice of milk poured over it. If peanut butter isn’t your thing, you can substitute the peanut butter with another creamy nut butter such as one made with almonds.

Is this cereal Paleo?

This cereal is not Paleo due to the peanut butter as well as the baking soda. If you want to make a Paleo version, remove the leavener and substitute the peanut butter with almond butter.

  • Step 1

    Preheat an oven to 350 F. Combine all the liquid ingredients into a bowl. Mix with a spoon or spatula until smooth.

    Next, add in the dry ingredients. Mix well with a spatula or spoon. The mixture will be soft but not stick to your hands when you roll the dough into small balls.

    Roll the ball into very small rounds about ¼” across or less. Be sure to roll them all the same size so they bake evenly. Place the balls on a parchment-lined baking sheet.

    Bake for 9-10 minutes or until nicely golden brown. Do not touch the cereal pieces until they are completely cooled as they will be fragile. The cereal will be easier to handle once completely cooled.

    Fill a small bowl with ¼ of the cereal pieces. Top with milk of choice (unsweetened almond milk, cashew milk, etc.). Enjoy immediately.

    The batter is so runny, you can’t form balls with it. They look like little flat cookies. They taste good but wondering if there is something wrong with amounts of ingredients or something missing?!
