Ingredients

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Slice the leek into 3 even segments discarding the outer leaves and the tough base. Slice each segment in half lengthwise. Arrange the sliced leek halves tightly into a small oven proof dish. Dot with half the butter and transfer to the oven to bake for 10 minutes until just tender.

    Whilst the leeks are baking, melt the remaining butter in a small saucepan over a low/medium heat then add the cream cheese. Stir to combine until melted together.

    Add the cream, crumble in the feta and sprinkle in half the parmesan. Bring to a simmer and stir to combine. Cook gently until hot through, the cheese has melted and the sauce is thick and creamy.

    Pour the sauce over the part cooked leeks and sprinkle over the remaining parmesan. Return to the oven to bake for a further 12-15 minutes or until bubbling and golden on top.

      This is so delicious! Rich, melty, & filling. I let it bake just a little longer to really carmelize the leeks. I make this often.

          Is it one leek for four servings ? Or four leeks. Recipe says one each

            Look at the weight per serve. This shows only one leek.
