10 min

  • Step 1

Preheat an oven to 350 degrees, and line a small sheet tray with parchment paper. Arrange 8 TB of shredded cheese into 8 discs on the tray. Spread the cheese out into thin layers, but don’t let the edges touch each other.
    Step 1
  • Step 2

Slice half a thick jalapeno into 8 thin rounds. You may remove the seeds if you wish. Lay a slice of jalapeno in the center of each cheese disc.

Bake the cheese crisps in the oven for 4-5 minutes or until the cheese is melted, bubbly, and lightly golden brown. The jalapeno slices will naturally sink into the center of each crisp.

I didn’t use parchment paper - could that be why they didn’t get crunchy?

Once the crisps have cooled, you can keep them in a ziploc bag with the air pressed out or an air-tight container in your refrigerator.

So is this 2g net carbs for 8 crisps?

If you buy hard cheese and shred it yourself- it would be zero carbs (buy good cheese). The already packaged cheese has potato scratch in it-

Yes, 1 serving of 8 crisps equals 2g net carbs.. depending on the type and brand ingredients you use.

These are so easy to make and delicious. Just Remember to use parchment paper and not wax paper. Otherwise you will never get the cheese crisp off that paper.
