Low Carb Hemp Pork Chops and Green Beans

Make this high-protein, low-carb dinner recipe for your next Keto meal! Whether you’re a hangry, trying to build muscle, or doing Keto your own way, this high protein meal is sure to fill you up and sustain you until your next mealtime. You may consider this recipe if you’re fasting and need more macros in your 'fast-breaking' meals as well. Each meal consists of two thin-sliced pork chops that are “breaded” in a seasoned mix of parmesan cheese and hemp seeds. Served on the side is a buttery heap of sauteed green beans with toasted almonds and crunchy bacon. This meaty meal will have you eating like a king.

What do hemp seeds do?

Hemp seeds are a rich source of magnesium. They also provide fat, fibre and protein to your diet while adding minimal carbs. You can find hemp seeds in the health food section at your grocery store or amongst the special diet foods. There may be health foods shelved near or around your grocery store’s pharmacy if it has one.

If you use frozen green beans

While it’s optional to use frozen green beans in this recipe, make sure they’re ready to use. They need to be fully thawed. Expect to cook the green beans longer and at a higher heat than if you were using canned green beans. Be gentle while cooking so you don’t break down the tender green beans from frozen.

Add more fat to your high protein Keto meal

If you need to add more fat to your meal, an easy way to do so is to go with a high-fat sauce or condiment. Smother your pork chops in a creamy mushroom sauce, white cream sauce, or hollandaise sauce. Like cheese? Make a rich cheese sauce. The key is to use lots of butter and cream when making these types of high-fat sauces, and you’ll only need a little bit on your plate.

    Pat thin-sliced pork chops dry with a paper towel and lay a piece of parchment paper over them. Pound the pork chops thin with a cooking mallet. Then, rub ¼ teaspoon olive oil into each side of each pork chop, totaling 1 teaspoon oil per serving.

    Combine parmesan cheese, hemp seeds, salt, pepper, onion powder, garlic powder, and paprika on a plate (you may want to double these ingredients just to ensure you have enough to work with). Use a pair of tongs to lift and press each pork chop into the hemp seed “breading”. Make sure the pork chops are completely coated before continuing.

    Heat avocado oil in a non-stick pan over medium-high heat until the oil is hot. Place the breaded pork chops in the oil, and cook them for about 5 minutes per side. You can adjust the heat as necessary to avoid burning the pork chops.

    Set the cooked pork chops aside to cool on a serving plate, but return the pan back to your stove. Dice the bacon and cook it in the same pan on high heat. Cook the bacon until it’s just becoming crispy.

    Turn the heat down to medium-low heat. Add drained canned green beans (or thawed green beans from frozen) to the pan. Season the pan with salt, pepper, garlic powder, and red pepper flakes. Then add sliced or chopped almonds.

    Stir and saute the ingredients until the almonds toast - about 90 seconds. Then, reduce the heat to low and add butter to the pan. Stir the ingredients until they’re coated with butter. Serve the hot bacon almond green beans with your pork chops and enjoy.
