Low Carb Grilled Peach Salad
As summer winds down, it's the perfect time to savor light, flavorful dishes that highlight seasonal produce. This grilled peach salad, complemented by a tangy lemon honey vinaigrette, is an excellent example of Low-carb late summer recipes. Combining juicy peaches, creamy goat cheese, and crunchy walnuts, this salad is both refreshing and satisfying.
Are there any variations to this recipe?
Absolutely! This peach salad can be easily adapted to suit your preferences. For those who aren’t favorites of peaches, nectarines or plums can be used as a substitute, offering a similar sweetness and tartness. Alternatively you can substitute goat cheese for feta or even a dairy-free cheese can provide a different twist. To enhance the salad’s flavor profile, consider adding protein like grilled chicken or shrimp. For an extra kick, increase the red pepper flakes or add a bit of hot sauce. You might also try different nuts, such as almonds or pecans, for varied texture and flavor.
Can this recipe be made on an outdoor grill?
Yes, this Peach Salad recipe can be adapted for an outdoor grill, adding a smoky flavor to the dish. To grill the peaches, preheat your grill to medium-high, brush the peach quarters with melted butter, and cook them directly on the grates for 3-5 minutes per side until caramelized. For the walnuts, place them in a heatproof pan or foil packet on the grill over indirect heat, tossing with Keto liquid sweetener, cayenne pepper, and kosher salt, and cook for about 2 minutes until toasted. Assemble and enjoy.
What to serve with this dish?
This peach salad pairs beautifully with a variety of side dishes. For a light meal, enjoy it with a chilled white wine or sparkling water. To make it more substantial, serve alongside crusty Keto bread or a salad. For a heartier option, grilled chicken or fish complements the salad’s fresh flavors perfectly.
