Low Carb Sweet Bread Rolls

These sweet Keto bread rolls are bursting with flavor from juicy fresh blueberries. Part bread, part muffin, these Keto rolls make an excellent breakfast or post-dinner treat. Simple to prepare, these Keto bread rolls are a great low carb option for the whole family to enjoy. Perfect to satisfy those carb cravings totally guilt-free!

Can You Eat Bread on Keto?

Traditional bread and bread rolls are carb-dense and not Keto compliant. It is however super simple to create your own delicious Keto breads with a few low carb swaps. For our sweet Keto bread rolls, we have used a base of ground almonds, coconut flour, warming cinnamon, baking soda, cream cheese, butter and egg. Once the dough is prepared, fresh blueberries are stirred throughout the mixture for bursts of juicy flavor. The bread rolls are then shaped and baked until golden.

Serving Suggestions

These tasty Keto bread rolls are perfect served warm and doughy from the oven, slathered in butter or a low carb nut butter. This makes a great breakfast option, perfect to grab and go with a Keto coffee.     Add the ground almonds, coconut flour, erythritol, cinnamon, xanthan gum, baking soda and salt to a mixing bowl. Mix everything together well to combine. You may adjust the cinnamon and sweetener as desired to suit your personal tastes. You may also sub erythritol for your preference in granulated low carb sweetener, adjusting the quantity as desired. Be sure to adjust your macros to account for any changes.

    Melt the butter. Add the melted butter, cream cheese and lemon juice to the mixing bowl with the dry ingredients. Beat everything together well to combine. You should have a very firm dough-like consistency.

    Crack the egg into the bowl. Beat the mixture together well until thoroughly combined. You should have a very thick but smooth batter/dough.

    Add the blueberries to the bowl with the batter. Stir well to combine, distributing the blueberries evenly throughout the batter. Cover the bowl and transfer to the fridge to chill for 15 minutes to firm the dough.

    Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper. Remove the chilled dough from the fridge. Divide the dough into 5 even-sized portions. Shape the dough into balls with your hands and arrange across the prepared oven tray. Press each dough ball down just a little with your palm.

    Transfer the tray to the oven. Bake for 25-30 minutes or until golden brown all over. You can test the center with a skewer to make sure it comes out clean. Set the rolls aside to cool and firm a little before serving.

    Can you use ground flaxseed instead of coconut flour?

      Hi, I haven't tried but I don't believe they have the same properties so I am not sure that it would work.
