  • Step 1

    Cut the cauliflower into smaller, bite-sized pieces. Add to a microwave-safe bowl. Microwave until tender. Optionally, steam the cauliflower until tender. Set it aside.

    Cook the bacon over medium heat until crispy. Remove the bacon from the pan and transfer to a plate lined with paper towels. Reserve the bacon grease in the pan.

    Finely chop the jalapenos. Add them to the pan and cook for 5-6 minutes, stirring occasionally. Add the cream cheese and continue to cook for a few minutes or until the cheese melts.

    Shred the cheddar cheese. Add the heavy cream, butter, and cheddar to the pan. Continue to cook for another 2-3 minutes.

    Crumble the bacon. Add the cauliflower and bacon to the pan and mix well. If the sauce is too thick, add some water or chicken broth (two tablespoons at a time). Continue to cook for another 2-3 minutes.

    When done, remove it from the heat and transfer it to serving plates. Optionally, season with some salt or black pepper and garnish with freshly chopped parsley. Enjoy!

      Big win! I don’t miss Mac and cheese with this recipe. I actually prefer this over traditional Mac n cheese! Never thought that would happen!
