The key to a seriously delicious chicken wing is BAKING the sauce into the wing instead of tossing it in sauce after frying in a deep fryer. Your sauce will actually stick to the wing and the flavor penetrates the meat. These wings are coated in classic hot sauce that has been thickened up and given the keto treatment (butter)!

    Bloom powdered gelatin by placing it in a dish and pouring cold tap water over it. Leave it undisturbed for 2-3 minutes.

    Melt the butter in your microwave. Then, whisk it into your hot sauce and garlic in a large mixing bowl.

    Stir the boiling water into the bloomed gelatin (simply boil a small pot of water and remove the amount you need for the gelatin). Once the gelatin is dissolved, whisk it into the hot sauce mix. Set this bowl in your refrigerator until later in the recipe.

    Preheat an oven to 400 degrees. Arrange whole chicken wings on a large sheet tray (2 whole wings per serving). Sprinkle the salt and pepper over the wings, followed by a drizzle of olive oil (¼ tsp per wing).

    Bake the tray of wings for 20 minutes. Then, remove the wings from the oven. One by one, dip each whole wing into your cold hot sauce mixture, making sure they get completely coated in sauce before returned to the sheet tray.

    Bake the tray of wings for 15 minutes. Then, repeat the dipping process in Step 5. Bake for another 15 minutes.

    After 2, 15-minute baking rounds, dip the wings in the remaining sauce for a final time. This time, bake the wings for 20 minutes. Your wings will have baked for 20min-15min-15min-20min (70 minutes total, dipped in sauce 3 times total). Serve your baked hot wings with your favorite side of ranch or blue cheese sauce!

    What could you use in place of the jello? My husband doesn't eat pork and jello is made with pork fat.

      I saw beef gelatin at Walmart recently.

      I'd just leave it out period. Recipe sounds great but by dipping 3 times anyways I cant see the jello making any difference if ya just ditched it.
