Keto Garlic Chive Cucumber Finger Sandwiches
This is a great snack to make for entertaining a group of friends OR you can keep them all to yourself! The cream cheese mixture is made light and fluffy and then loaded with fresh chives and garlic. Munch away!

Cucumber
11 ounce
Cream Cheese
8 ounce
Garlic
1 clove
Chives
¼ cup, cut pieces

Step 1
Slice a cucumber into ¼-inch thick rounds. You should get about 36 pieces total, but make sure you at least have an even amount of cucumber. Pat the cucumber rounds dry with a paper towel.Step 2
In a stand mixer, whip the cream cheese with a paddle attachment for about 5 minutes. Whip as long as it takes until you have fluffy cream cheese that is easy to manipulate - the same texture as a soft buttercream frosting.Step 3
Finely mince the garlic clove and fresh chives. Slowly mix them into the cream cheese.Step 4
Spread your cream cheese mixture on half of your cucumber slices. You can simply do this with a spoon, or you can use a piping bag or ziploc bag to pipe the filling onto the cucumber. Top the finger sandwiches off with the other half of your cucumber slices.

It looks good. I’m really confused about the serving size, why does it say 9x2 sandwiches. If you’re making 18, how many are in a serving?
