Keto California Sushi Roll Bowl
Even for the pickiest sushi eaters, California rolls are an all-time favorite by just about anyone! We took out the white rice and replaced it with cauliflower rice. Everything else you expect to find in a California roll is in this sushi bowl - spicy mayo included! Toss this bowl together when you need a quick and filling lunch.

Crab, Canned, Drained
2 ounce
Salt
0.12 teaspoon
Black Pepper
0.12 teaspoon
Cucumber, Raw, Without Peel
¼ cup, chopped
Avocado
1 ounce
Spinach, Raw
1 ounce
Cauliflower Rice
1 cup, cut pieces
Soy Sauce
1 teaspoon
Mayo
1-½ tablespoon
Hot Chili Sauce (Sriracha)
1 teaspoon
Sesame Seeds
¼ teaspoon, whole pieces
Laver (nori), Dried
⅛ sheet

Step 1
Combine the crab with a pinch of salt and pepper. Set this aside.Step 2
Dice the cucumber and the avocado. Then, gently fold together these ingredients with the crab mixture.Step 3
Start preparing the bowl by filling the bottom with the spinach. Place the cauliflower rice on top. Then, drizzle the soy sauce over the top.Step 4
Spoon the crab mixture over the top of the bowl. Make a spicy mayo by stirring together the mayo and Sriracha. Place the sauce on top.Step 5
Top off your sushi bowl with sesame seeds and crunchy strips of Nori seaweed. Enjoy!

This was really good! I didn't have crab so I used canned tuna. I suggest making extra sauce 😊

Should the cauliflower rice be cooked before adding to the bowl? Do you use it warm, or should it be cooked and then chilled?

Just meal prepped some of these for lunch with my husband. So good!
