Vegan Keto desserts don't always require unique ingredients and a lot of time to prepare. These simple and delicious vegan Keto lemon fat bombs take about 10 minutes to prepare and about 10 minutes setting in the refrigerator. They are a fantastic combination of five simple ingredients you probably already have in the kitchen or can easily pick up in your local store. You just need to add the ingredients to a food processor and adjust the sweetener according to your taste. Optionally, you can add more lemon zest or even a few drops of lemon extract instead of vanilla.
How to store these fat bombs?
You can store these vegan Keto fat bombs in the refrigerator for up to 7 days. Remove from the fridge for about 15 minutes before serving.
Can I replace the shredded coconut with coconut flour?
We don't recommend using coconut flour for this recipe. The fat bombs will be too thick and dry.

Desiccated / Shredded Coconut (Unsweetened)
1.25 cup
Coconut oil
0.25 cup
Powdered Erythritol (Icing Sugar)
3 tbsp
Lemon Peel Or Zest Raw (Copy)
1 tbsp
Vanilla extract
0.5 tsp

Add the shredded coconut, coconut oil, powdered erythritol, lemon zest, and vanilla extract to a food processor. Process until well combined. Taste and adjust the sweetener according to your taste.Step 2
When done, you should get a slightly sticky mixture. Refrigerate for about 10 minutes before shaping the balls. If the mixture is too sticky, add some more shredded coconut and blend again.Step 3
Scoop out about two tablespoons of the mixture. Lightly grease your hands and shape the fat bombs. Serve immediately or store for later.

I actually got seven very nice size bombs out of this. Did not appear to dry, but I will find out tomorrow after all the others sit in the fridge. Flavor is awesome.

These are good, but recipe needs review. I think the amounts are off. It ended up being very dry. I added more coconut oil, but was still dry.
