Step 1
Finely dice the cucumbers and onion and transfer them to a bowl. Combine the erythritol, vinegar, ground turmeric, and Dijon mustard in a small saucepan. Bring to a boil over medium heat, stirring until the sweetener is just dissolved.Step 2
Remove from the heat and let cool to room temperature. Pour the pickling liquid over the diced cucumbers and onions. Cover with cling film and let it sit for 2 hours.Step 3
Transfer the relish mixture to a large jar. Push down the veggies using a wooden spoon, leaving ½ an inch (1cm) of liquid above the relish. If the liquid is too much, discard the extra.Step 4
Seal the jar with its lid. Add water to a large pot and bring to a boil, then take it off the heat. Place the jar in the boiling water for 10 minutes.Step 5
Remove the jar and place it on top of a kitchen towel. Let it cool completely or for 24 hours on your countertop. It is ready at this point. Once the jar is opened, it must be refrigerated.

This recipe is dangerously written. Everything is fine up until the canning instructions. You never can in reused food jars with one part lids. You never cool your pickling liquid before canning. You never can a jar on its side. This is all common canning knowledge. If prepared as written, this recipe could make someone very, very sick.
