Keto Sauteed Green Beans with Lemon and Parsley

Every Keto dieter should have some easy, classic vegetable Keto side recipes at their disposal. Keto Sauteed Green Beans with Lemon and Parsley should be one of them. Fresh green beans are sauteed in ample amounts of butter and over high heat to get a delicious charring on the beans. Freshly squeezed lemon juice is added right at the end, along with a sprinkle of parsley to top it off.

What kind of green beans should I use?

Use fresh green beans, not canned or frozen, for this recipe, as the texture of fresh green beans is superior. Also, fresh green beans have no moisture on them, which allows for a sear.

Do I have to use ghee?

No, ghee was used in this recipe to keep it safe for those with dairy issues. Feel free to use regular salted butter instead.

  • Step 1

Wash and spin the green beans to remove as much water as possible. Preheat a large nonstick skillet over medium-high heat until hot.

  • Step 2

Add in the ghee and swirl the pan to coat. Add in the beans and allow them to cook, occasionally stirring for 3-4 minutes. Then add 1 ½ tbsp of water and toss the beans well, allowing the water to evaporate and soften the beans. Add in the sea salt. Taste and decide if you want them salter (the salter, the better). Keep cooking the beans to your desired doneness. I like to leave them somewhat crunchy. The entire cooking and stirring process will take upwards of 7-8 minutes.

Once the beans are cooked how you like, add in the lemon juice and garlic cloves. Cook for 30 seconds to one minute. Briefly toss the beans. Plate them and sprinkle with chopped parsley. Serve hot.
