  • Step 1

    Heat the olive oil in a skillet over a medium/high heat. Season the pork with a little salt and pepper and add to the pan to brown on all sides. Transfer to a crock pot.

    Roughly chop the celery and finely slice the onion and garlic. Add to the pan with the pork, peppers, stock, tomato purée, oregano and paprika. Mix together to combine.

    Cover and cook on high for four hours or until the pork is completely cooked through.

    We made this for dinner tonight and it was great! We added beef meatballs to ours along with pork so it went a little higher on the carbs and protein/fat but was worth every bite! Yummy!

            I have no idea what a piquante pepper is (and neither did the produce clerk at the supermarket, lol), so I just used red, orange and yellow bells. The recipe turned out fine.

          I had leftover pork tenderloin and used that for this stew. Just put it in a stew pot and cooked just to soften the veggies. It was delish!
