What are chocolate ganache truffles?
Truffles are a type of dessert or sweet that consists of a ganache filling (made by combining melted chocolate and heavy cream), usually round in shape and coated with crushed nuts, melted chocolate, coconut shreds, sprinkles, or cocoa powder. They are pretty simple to make and usually require just 2 ingredients, heavy cream and chocolate. Some recipes usually call for vanilla extract for flavor or even coconut oil to help in melting the chocolate faster. Chocolate ganache truffles can be made in a variety of flavors depending on your liking.
Are ganache truffles Keto?
Most truffles are typically not considered to be Keto friendly due to the high amounts of sugar in the chocolate used. However, you can easily make Keto-friendly truffles by choosing Keto friendly chocolate bar or chocolate chips. This easy, Low-carb sea-salted chocolate ganache truffles recipe is Keto-friendly since it uses sugar-free chocolate and cocoa powder.
How do you make these easy, Low-carb sea-salted chocolate ganache truffles dairy-free?
For dairy-free ganache truffles, replace the heavy cream with full-fat canned coconut milk. Avoid using the carton of coconut milk as it may not have a high-fat content. To make these easy, Low-carb sea-salted chocolate ganache truffles, use room-temperature coconut milk since cold coconut cream tends to separate and might require heating to combine to a uniform consistency.

Ingredients
Chocolate Chips
2 cup, semi-sweet
Heavy Cream
1 cup
Sea Salt
2 teaspoon
Cocoa Powder
¼ cup
Recipe Steps

2 h
Step 1
To a heat-safe bowl, add the chocolate chips and set aside. To a small pot over medium heat, bring the heavy cream to a vigorous simmer but not boiling. Then, pour the simmering heavy cream over the chocolate chips. Immediately wrap the bowl with plastic wrap and set it aside for about 3 minutes. Do not stir.Step 2
Unwrap the bowl and gently fold the chocolate and heavy cream together to form a smooth and even mixture. The mixture is ready once the fat from the heavy cream and chocolate have completely combined, and no cream is visible in the mixture.Step 3
Transfer the bowl to the refrigerator unwrapped for about 30 minutes to set. Once set, add the coarse sea salt over the top and transfer the bowl to the freezer uncovered for 1 hour. The mixture is ready to shape when the ganache is firm enough to hold shade yet smooth enough to scoop out.Step 4
Line a tray with parchment paper and sift the cocoa powder into a clean bowl. Using a small ice cream scoop or a spoon, scoop out the mixture and roll each scoop between the palms of your hands to create 1-inch truffle balls. Then roll each ball in cocoa powder and arrange them on the tray.Step 5
Once all the ganache has been shaped, transfer the tray to the freezer for about 15 minutes to slightly firm up. Enjoy as frequently as you wish. To store, place the truffles in an air-tight container in the refrigerator and sprinkle some additional cocoa powder on the bottom of the container and over the balls to avoid sticking.

I use Lilly’s chocolate chips sweeten with Stevia. Very good and Keto friendly. Just make sure you do not eat more than 2 a day. They can add up fast!

These are delicious! Time consuming but worth it. There will be a lot. I suggest keeping half (if not more) in the freezer until you want to eat the next beach because they'll get moldy past 2 weeks or less in the fridge.

I would check this nutritional information using the actual products you will be using. I will probably use 90% Lindt chocolate bars, so I’ll just enter the ingredients in the “My Food” “Recipes” section, and see what it comes out to. It shouldn’t be that many carbs at all!
