Preheat oven to 380 degrees Fahrenheit.Step 2
Finely chop the onion, sage and rosemary and mince the garlic. Melt the butter in a small pan over a medium heat and add the chopped herbs, onion and garlic, sweating until tender. Set aside to cool.Step 3
Add the cooled mixture to a mixing bowl. Finely chop the tomatoes and add to the bowl along with the walnuts, almond meal and lemon zest. Season with salt and pepper and stir well to combine.Step 4
Beat the egg and add to the mixture. Stir well, binding the mixture together.Step 5
Using your hands, roll the stuffing into 12 even balls.Step 6
Arrange the stuffing balls across a shallow baking tray and drizzle with olive oil.Step 7
Bake for 10-12 minutes until cooked through and golden brown all over.
