Preheat oven to 350F /180C and line a cookie sheet with parchment paper.. Add the walnuts and almonds to a food processor. Pulse a few times to chop them finely. Slice the cold butter.Step 2
Add the almond flour, sliced cold butter, vanilla, powdered Low-Carb sweetener, egg, and salt to the food processor, then pulse until a moldable dough forms. Alternatively, you can use a hand or stand mixer, or even mix the dough by hand.Step 3
Roll the dough into approximately 16 balls and place them in a shallow container. Freeze the balls for about 1 hour to prevent them from flattening when baking.Step 4
