Although it's best served directly from the oven, you can prepare this casserole in advance and simply heat a piece in a microwave when ready to serve.

How to store the leftovers?

Cool the casserole to room temperature and wrap the baking dish with plastic wrap. Refrigerate leftovers for up to 4 days. Alternatively, transfer to air-tight containers and freeze for up to 6 months.

    Cut the cauliflower into small florets. Add to a food processor. Process until it resembles rice.

    Melt one tablespoon of butter in a large frying pan over medium heat. Add the cauliflower and season with salt and pepper to taste. Stir well and cook for 8-10 minutes.

    Add the heavy cream and half of the shredded cheddar. Stir all well and reduce the heat to low. Continue to cook for 3-4 minutes or until the cheese has melted.

    Transfer the mixture to a baking dish (13x7 inch). Using a wooden spoon or a spatula, spread the cauliflower mixture as evenly as possible. Set aside.

    Melt the remaining butter over medium heat. Add the ground beef and season with salt and pepper. Mix well and cook for 10 minutes, stirring occasionally.

    Preheat the oven to 400°F/200°C. Spread the meat evenly over the cauliflower layer. Top with the remaining cheddar. Drizzle ketchup and mustard over everything and bake for 10 minutes.

    When done, remove from the oven and cool for 10 minutes before serving. Cut into six equal pieces and optionally serve with some more sugar-free ketchup. Serve immediately.

      The family loved this recipe! I used the frozen cauliflower rice, and drained well in a mesh colander. I added chopped red onion, garlic powder and onion powder to the mince, as well as mixing in the ketchup and mustard at that point. Served on a bed of finely chopped lettuce - Tasted just like a Big Mac! YUM

        It was delicious but I added onions, garlic powder, and onion powder to my meat. I also added chopped dill pickles on top after baking.

          Very good. Thought it might need some zip so I added onion and garlic powder. I'll bet adding other vegetables, etcetera, would be good, too.

            Very bland too much cauliflower compared to meat. May try again but add more spice etc

              You can add more spicing to the meat, herbs etc , even beef bouillon powder. You can also add garlic salt and chives to the cauliflower, also a bit of cheese.

              Excellent!! I’m always looking for great casseroles to help with meal planning for the week. This one is awesome. I used frozen cauliflower rice, just thawed and squeezed out the water. I also baked without the ketchup and mustard. Added mustard and pickle right before serving. Will definitely be adding this on a regular basis. I’ll bet it’s great with bacon too. Maybe I’ll try that next time!!

                        Wow, like eating an old fashioned McD cheeseburger! Didn’t miss the bun! Not needed! Tastes GREAT! I used ground turkey, (vs beef) , onion flakes (seasoning) and I bought cauliflower rice in the frozen aisle, a whole lot easier! Also after baking it, I put sliced dill pickles on top. It was AWESOME TASTING!!! JUST AWESOME,🤩! Hubby said “it’s a KEEPER!”. 👍🏽😂

                          Great recipe! I also added frozen riced cauliflower and it was a bit watery but not too bad. I’m sure if you drain it and pat it dry it’ll be fine. Also added zero carb taco seasoning (Fiesta brand) and used ground chicken!

                          I made this recipe for the first time and loved the results. I added lettuce and tomatoes along with the mustard and ketchup and it tasted a lot like a cheeseburger. I think it could be done with a lot of variations, avocado, bacon, pickles, mayo. It is also a quick and very easy dinner. Will be adding to my regular rotation for sure.

                            This recipe is amazingly delicious! Felt like comfort food, which I was in desperate need of 😄. I sautéed 1/4 of onion and 1 clove garlic (chopped) prior to the ground beef and drained the beef; otherwise followed the recipe. I will be making this often!

                                I really liked this, it was tasty and easy to do. Cooked the beef in onion powder, garlic powder and smoked paprika, with diced onions, and topped with gherkins before the cheese. Used Heinz no sugar & salt ketchup.

                                  I didn’t use Ketchup or mustard. But add a sautéed mushrooms and onions. And cooked bacon on top. Best meal ever

                                      Bacon adds more fat not carbs so it depends on how much fat you took in during the entire day of the bacon wouldn’t be a problem.

                                    I added some condenced onions and 2 tbs of Worcestershire sauce to the meat as it was cooking. Only adds 2 gms Carbs. Tasts like my grilled cheese burgers 🍔
