This simple Animal-based meatball dish is nothing short of delicious. It is juicy, healthy, and packed full of protein. Using a handful of ingredients, the meatballs and zoodles are effortless and quick to prepare. The meatballs recipe is one of the Animal-based ground beef recipes that you can enjoy for lunch, dinner, or snack.

Is zucchini allowed in Animal-based diet recipes?

Some people are more flexible with their diets and include a small amount of the least-toxic plant foods, in this case, zucchini. We have used 1 zucchini to serve 4 people, adding 1 g of carbs to each portion. If desired, you can use ½ a zucchini, omit it, or swap it for squash or pumpkin.

Can you prepare this recipe using other proteins?

Like many Animal-based diet recipes, you can swap the beef for your preferred protein, as long as you use organic, high-quality meat. Feel free to use ground turkey, pork, chicken, or lamb for these meatballs.

Can you omit the parmesan and mozzarella cheeses?

Usually, Animal-based diet recipes allow some dairy, preferably A2 and low-lactose/lactose-free. You can swap the parmesan or mozzarella for cheddar, Monterey Jack, or gouda. You can omit them, but the final dish won’t taste as rich and flavorful.

Can you make these meatballs in advance?

These Animal-based beef meatballs are an excellent ahead-of-time recipe. Prepare the mixture and store it in the fridge for 3 days, or freeze it for up to 3 months. You can cook them for any meal you prefer, even a quick high-protein snack.

  • Step 1

    Preheat your oven to 400 F/200 C. To a bowl, add the ground beef, parmesan, mozzarella, the egg, salt, and ½ tsp black pepper. Chop the parsley and add most of it in, reserving the rest as garnish.

    Combine the meatball ingredients until everything has come together. Divide into 20 portions and roll them into meatballs. Add 1 tbsp butter to a skillet and place it over medium-high heat.

    Cook the meatballs in the skillet until browned on all sides. You may have to do this in 2 or 3 batches. Return all the meatballs to the skillet and transfer them to the oven.

    Bake for 10-15 minutes until the meatballs are fully cooked. Take them out of the skillet and let the rest. Meanwhile, use a spiralizer to make zucchini noodles. Add 1 tbsp of butter to a clean pan and place it over medium-high heat.

    Add the zoodles and cook for 3-4 minutes until just softened. Season with black pepper and toss. Don’t season with salt at this stage because it will cause the zucchini to release water.

    Divide the zucchini noodles into 4 bowls. Top with 5 meatballs. Garnish with the remaining parsley, season the zoodles, and serve!

      Delicious!!!! I’m now hooked on Zucchini noodles. My grocery store has them already spiralized and I will have them in my fridge from now on! The meatballs were great and easy too. Instead of cooking the zucchini noodles three or four minutes, just barely get them hot (and just use half the amount of pepper) because the crunchiness of the zucchini makes it great!

        Can not figure how you make noodles out a zucchini. Suggestions?
