Step 1
Start by preparing the marinade. Add the olive oil, lemon juice, thyme, rosemary, basil leaves, and dried oregano to a large bowl. Mince the garlic and add it to the herb mixture. combine together.Step 2
Season the lamb chops with salt and pepper to taste, then add them to the bowl with the herbs. Stir to coat completely, or use your hands to massage into the meat. Leave the lamb to marinate in the fridge for at least 2 hours, or best overnight.Step 3
Remove the lamb chops from the fridge. As the lamb comes to room temperature, preheat the oven to 180C/350F or heat a griddle over medium heat. Place the marinated lamb chops on a baking tray and cook for 6-8 minutes for medium rare or 8-10 minutes for medium-well done. Plate up and serve immediately with a wedge of lemon.
