    Crack the eggs into a mixing bowl and add the oregano, salt and pepper, beat together well to combine.

    Heat the butter in the skillet over a medium heat and add the beaten egg. Leave to settle and cook through.

    Scatter the grated cheese over the cooked omelette and allow to melt.

    Carefully remove the omelette from the skillet, place on a clean worktop and leave to cool. Arrange the chicken slices over the cooled omelette.

    Carefully roll the omelette up into a log shape.

    Using a sharp knife, carefully slice the omelette into 8 even segments.

        I’d think if the egg and mozzarella were cool first, before adding the chicken it should be fine- but probably wouldn’t last too long ?
