Gluten-free Keto Cinnamon Banana Bread

This banana bread is super moist and fluffy, you won’t believe it is gluten-free! It has a unique cinnamon crunch with every bite. This gluten-free Keto banana bread requires a few ingredients and less than 1 hour to come together. It makes for the perfect dessert or tea-time snack to be enjoyed with friends and family.

Are bananas Keto-friendly?

One banana has around 25g of carbs, meaning it would probably knock you out of ketosis if eaten in one go. Adding bananas to banana bread would increase the net carbs immensely. That’s why we opt for banana extract in this recipe. Choose a good-quality pure banana extract to get an authentic banana bread flavor.

How to store this Keto banana bread?

To store, transfer any leftover banana bread to an airtight container in the refrigerator for up to 7 days. To store for a longer period, slice the loaf, then place the slices in a zip lock bag in the freezer for up to 6 months. Allow the pieces to thaw completely before eating. Feel free to warm the bread in the microwave for about 30 seconds or in a preheated oven for about 5 minutes after thawing.

Can you use other types of flour in this recipe?

Yes. To substitute the almond flour, use an equal amount of sunflower seed flour or walnut flour; they work perfectly! Coconut flour will not work in this recipe because it is highly absorbent. The volume of wet ingredients would need to be adjusted to compensate for the absorbent nature. If the moisture is not adjusted accordingly, using coconut flour may result in dry, crumbly, and tough banana bread.

What other mix-ins can you add to this recipe?

The possibilities are endless, from nuts to seeds to chocolate! It all depends on your preference. Some nuts that will work well in this gluten-free Keto recipe include pecans and walnuts.     Preheat the oven to 180C/350F and line a loaf pan with parchment paper. To a small mixing bowl, add 3 tbsp ground cinnamon and 4 tbsp granulated allulose sweetener. Mix to combine and set aside to be used for the swirl and topping.

    In a large mixing bowl, add the almond flour, baking powder, and salt. Whisk together to combine. Ensure there are no lumps of almond flour left behind in the mixture.

    In a separate small mixing bowl, add the eggs, melted coconut oil, 4 tbsp granulated allulose sweetener, banana extract, and vanilla extract. Use a whisk to combine everything together until a uniform mixture is formed. Then, pour the mixture into the bowl with the dry ingredients.

    Use a spatula to combine the dry and wet ingredients until the mixture is of uniform consistency. If the batter appears too thick, add a splash of milk and gently mix to incorporate fully. Transfer ¾ of the amount of the batter to the loaf pan and spread evenly using a spatula.

    Sprinkle ¾ of the cinnamon-sweetener mixture evenly on the batter and then add the remaining batter on top. Finally, sprinkle the remaining cinnamon-sweetener mixture.

    Transfer the loaf pan to the oven and bake for 40-45 minutes until a skewer inserted in the middle of the bread comes out clean. Remove from the oven and allow the bread to cool completely in the pan.

    Remove the bread from the pan and slice the loaf into 2-inch thick slices. Serve with a warm cup of tea or coffee. Store leftover bread in an airtight container at room temperature to be enjoyed later.

    Could you use green banana flour instead of banana extract??

      No, while green banana flour is gluten free, it’s still incredibly high in carbs and it doesn’t have the banana flavour that the extract gives.
