5% Authentic Greek Strained Yogurt

Celery
1 medium - stalk - 7 1/2" to 8" long
Parsley
2 tbsp, chopped
Dijon mustard
1 tbsp
Black pepper

2 small - 6 3/8" long

Step 1
To a pot over medium heat, boil the eggs for 10 minutes until well cooked, then peel. Dice the celery and chop the parsley. In a medium bowl, smash the hard-boiled eggs with the back of a fork. Stir in the yogurt, celery, parsley, Dijon mustard, pepper and salt.Step 2
Cut the cucumber in half crosswise, then cut each piece in half lengthwise. With a small spoon or measuring spoon, scoop out and discard the seeds.Step 3
Divide the egg mixture evenly between the four cucumber boats. Sprinkle with cayenne, if desired. Serve.

I don't believe these recipe people actually understand the difference between a Ketogenic diet and a low carb diet. Fats are important on keto. Calories are not the main gauge on keto. Some low carb diets allow up to 100 actual carbs a day. Keto tries to stay at 30 or below total carbs a day. Low/non fat dairy has way more carbs than regular, full fat dairy. Making your own mayo with avocado oil or butter is more what you want on a Ketogenic diet. I love egg salad. This looks good. But I will have to revamp the recipe before it would work for me.

This recipe brought back so many memories from childhood with my Grammy. It’s been 25yrs since I’ve had egg salad. I didn’t have her exact recipe. She’d add a dash of paprika or seasoned salt, depending on mood. I knew it was hers once I smelled it. Amazing how many memories return with scent and/or taste. Thank you. 😊🥰

Nice change from my usual lunch. I used 1/2 mayo and 1/3 full-fat, plain, Greek yogurt. Threw in a 1/2 tsp of garlic powder. Thanks for the recipe!

I made this dairy free by using my homemade mayo. I used English cucumbers, saving the cucumber that was scooped out and mixed with the egg salad.

I would use avocado mayo instead of the yogurt. Nutritionally, the fat is better.
