Tomatoes Sun Dried Or Sundried Packed In Oil

Cream Cheese

Parsley, Fresh
1 tablespoon
Garlic
1 clove
Lemon Peel Or Zest Raw

Cucumber, Raw, With Peel
½ small - 6 3/8" long
Salt, Sea Salt

Step 1
Peel the outer skin from the cucumber and discard. Peel the cucumber flesh into 8 wide strips.Step 2
Add the cream cheese, 1 small garlic clove, the sundried tomatoes, parsley, lemon zest, salt and pepper to a food processor. Blend to form a semi smooth paste.Step 3
Divide the cream cheese mixture between the cucumber strips, filling the center of each lengthwise.Step 4
Carefully roll each strip of cucumber up around the filling to create your pinwheels. Refrigerate until ready to serve.
