Here’s a delicious fall-off-the-bone Keto BBQ ribs recipe made in less than 1 hour! Yes, you read that right, no need for long cooking times when you have an Instant Pot or pressure cooker. This is an easy approach to cooking ribs with maximum impact. Follow the recipe to make a deliciously rich BBQ sauce, or feel free to use any Keto-friendly BBQ sauce. For best results, choose a rack that is approx 500g/ 1lb for the most tender results. One rack will typically serve two people. If you’re looking to make this Keto BBQ recipe for a larger group, you should be able to fit two to four racks into your InstantPot.

How long to cook ribs in the Instant Pot or pressure cooker?

Depending on the size of your ribs, a 500g rack of baby back ribs typically takes 23 minutes on high pressure + 10-15 minutes of natural release. Spare ribs will take longer because the meat is tougher; cook for 35 minutes on high pressure + 15 minutes natural release. When the meat is done, transfer it to a baking tray and brush the BBQ sauce over the top. Broil for 6-8 minutes until the sauce is bubbling and thickens.

Can I make this recipe ahead?

Yes, you can make the spice rub and marinate the ribs with the dry rub 1-2 days in advance. Wrap in foil and store in the fridge until ready to pressure cook. You can also make the BBQ sauce up to 5 days in advance and store it in the fridge until needed. If the consistency is a little thick, simply dilute with 1 tablespoon of water before broiling the ribs.

    Pat the rack of ribs dry with a paper towel. Rub the ribs lightly with the oil. Add 2 tablespoons erythritol, 1 tablespoon paprika, 1 teaspoon chili powder, ¼ teaspoon cayenne, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon black pepper, and 1 teaspoon salt to a small bowl. Generously sprinkle the dry rub all over the ribs, ensuring every inch is well coated.

    Place the wire trivet in the bottom of the InstantPot or pressure cooker. Pour in 1 and a half cups water and 3 tablespoons of apple cider vinegar. Carefully stand the ribs on the trivet on their side, wrapping the rack of ribs rack around the inside of the pot.

    Cover the Instant Pot and set the valve to seal. Pressure cook on high for 23 minutes. For more than 2 racks of ribs, or if your ribs are very meaty, increase the timer to 25 minutes. Allow natural pressure to release for 10-15 minutes. You will know it is done when the pressure pin drops.

    Make the BBQ sauce as the ribs are cooking. Add 3 tablespoons tomato paste, 1 tablespoon water, 2 tablespoons erythritol, 2 tablespoons soy sauce, 2 tablespoons Worcestershire sauce, 1/2 teaspoon cayenne, 1 teaspoon smoked paprika, 1 tablespoon dry mustard, 2 cloves garlic(minced), 1/2 teaspoon sea salt, 1/2 teaspoon black pepper and 1 tablespoon apple cider vinegar. Use a whisk to combine thoroughly.

    When the ribs are done, carefully transfer to a baking tray. Generously brush the ribs with the BBQ sauce.

    Place the ribs in the upper third of the oven and set it to broil. Broil for 6-8 minutes or until the sauce begins to sizzle and caramelize. Serve hot with a side of choice.

    Is the serving with or without bone?

      Since this is a bone-in rib and the weight account includes the bones, I would think the bone is included in the final product. Also, though, considering the fat will melt and the weight of the product will shrink with cooking, the servings listed are probably not accurate. More than likely this will serve 2, with each person getting 3/4 lbs of ribs (after cooking).

      This is NOT KETO! Look at what the range is for KETO values are and divide your nutritional values not only by 3 for 3 meals a day, but you must also subtract at least a reasonable amount from each meal's allotment so that you can have at least one snack a day! If your recipe does not fit within these parameters for an entree (Main Dish), then you have gone TOO HIGH!
