  • Step 1

    Arrange jumbo scallops on a flat surface and pat dry on all sides with a paper towel. Season the tops of the scallops with all seasonings.

    Slice raw strips of bacon in half into 2 short strips. Wrap a piece of bacon over each scallop, tucking the ends of the bacon under the scallops.

    Heat the olive oil in a pan over medium heat, and place the scallops in with the ends of bacon tucked under the scallops against the pan. Cook the scallops for 3-5 minutes per side - until the bacon is very crispy on each side, flipping over with a pair of tongs.

    Transfer the cooked bacon wrapped scallops to a serving plate. You may rest the scallops on a paper towel to soak up excess fat from the bacon at your discretion.
