Keto Multigrain Loaf With Yeast

In need of the perfect multigrain loaf that is full of healthy fiber from chia seeds, flax seeds, almond flour and more? Look no further than this yeasted loaf! This loaf is the perfect slicing bread for avocado toast, toast with cream cheese or toast slathered with a thick layer of almond butter.

Why is there honey in this recipe?

Since there are no starches in Keto-friendly breads, a small amount of honey is used to feed the yeast. However, the amount is small enough and the proof time of the bread is long enough for the yeast to completely convert the sugar so there will be no sugar left after the bread is baked and will not affect carb count. This will allow this to stay a Keto bread as well as paleo bread.

Why did my Keto bread not rise?

If your Keto bread did not rise, it is because your yeast was not activated. To avoid this, be sure to activate the yeast with the honey. You will know it is activated when it is very foamy.

What other additions can I add to the bread?

Any Keto friendly or low carb nuts or seeds can be added like sesame seeds, sunflower seeds, almonds or walnuts.

Recipe Steps

  • Step 1

    Preheat an oven to 350 F. Combine yeast, ¼ cup water and honey in a small bowl. Allow this to sit for 3-5 minutes until foamy.

    Combine all dry ingredients together in the bowl (including chia and flax seeds) of a stand mixer using a paddle attachment.

    Add vinegar and ½ cup boiling water. Then mix well in the stand mixer starting on low speed and then turning it to medium speed. Mix for 45 seconds to 1 minute.

    Add the eggs and mix well for another 1-2 minutes.

    Add the yeast mixture and mix well.

    Spray a loaf pan with nonstick cooking spray. Place dough into a loaf pan and put a line down the center. If you mound the dough into a loaf shape, it will help the final outcome. Allow the loaf to rise in a warm place for 1 hour.

    Bake in the oven for at least 60 minutes if not more (about 70 minutes). They tend to look baked on the outside, but are under on the inside and will collapse. Be sure to err on the side of caution and give them extra time if you are unsure, it shouldn’t harm it.

    Great recipe, a little bland for my taste but I will tweek it next time. So for now I will slather with salted butter. I don't understand what is 1 serving? how many slices?

    What is 1/4 slices =3 carbs equivalent to? How many slices are 3 carbs?

      The description before the ingredients provides a great explanation of how the small amount of honey is there to activate the yeast which needs it to convert to sugar so the dough will rise. There isn't any honey left however in the finished product.

            Have tried lots of keto types breads that have failed miserably but this one turned out great. Less salt perhaps? I used poppy and flax seeds. A 1 litre loaf tin works best.
