  • Step 1

    Preheat an oven to 375 F. Line an 8” x 8” cake pan with parchment paper. Mix the dry ingredients together in a medium-sized mixing bowl.

    Heat the coconut milk in the microwave until hot, about 45 seconds. Add in the eggs, vanilla, coconut milk and melted butter.

    Mix well.

    Pour into the prepared cake pan. Add blueberries evenly onto the top and bake for 25 minutes or until nicely browned on top.

      I substituted unsweetened almond milk, plant-based butter, sea salt, and 3 medium eggs for the 2 large because that's what I had on hand. This was good and hit the breakfast "carb" spot. I served with scrambled eggs and uncured turkey bacon. Yum! The leftovers freeze well, btw.

        Salty, I did add a bit more butter and used whole milk so it wasn’t dry or crumbly. But salty. Yuck

          So, I understand all of the commentary about whether this is a pancake or a pan cake and while I agree that it is a pan cake it tastes exactly like a pancake especially with the added syrup. I was pleasantly pleased with the result. I did take into account all the reviews and made the recommended changes. I reduced the coconut flour to 2 tablespoons, added an extra egg, increased the fat to 4 tablespoons (I did two tablespoons butter and 2 tablespoons coconut oil), added 1/2 teaspoon xanthan gum and finally I added Swerve, 1 tablespoon granular and 1 tbsp brown. It was plenty moist and delicious. I put mine in a rectangular pan, 8 by 10.5, simply because I don't have a square pan and was worried it might be too thin and dry but it popped up beautifully and I think it needed the extra space. I did cook for an additional four minutes. I decreased the serving size to 8 and it came out to 4 grams net carbs per serving. Breakfast is the most difficult time for me on keto because I was a toast and butter kind of girl but would be happy with any bready breakfast, a muffin, croissant, donut or waffle would do. While I was happy with bacon at the get-go four months in I'm really lamenting the loss of my former breakfasts and mostly make a lot of Keto muffins. I tried this recipe for a change up and couldn't be happier.

            I'd reduce the coconut flour to 2 tbsp to prevent so much drying/crumbling, add an extra egg and a couple tbsp of Swerve. I'd also increase the vanilla and butter for my personal flavor preference (and a bit more moisture).

              This recipe looks good but I just want to say that the title is misleading - Just like there’s a difference between girlfriend and girl friend. That’s a Pan Cake not a pancake. Thankyou and goodbye *mic drop*

                After reading the comments, added 1/2 tsp xantham gum. Perfect. Did not sweeten, treated as a pancake and served hot, with sugar free maple syrup and a side of bacon. Yum!

                  Yummy and not quite sweet enough for me. Maybe after I go Keto for longer I will lose my sweet tooth. Next back I will add Monk Fruit sweetener.

                    Good flavor but very dry! It is so dry it is a crumble cake. Needs either less almond flour or more liquid. Will try again but will do some revisions...think will try using twice the amount of eggs.

                      This looks great and I like that the recipe does not use xantham gum and erythritol. My doctor warned me to avoid xantham gum bacteria and any corn or corn products as they may cause inflamation.

                        Nice enough, bit moisture sucking and crumbly and could have done with xantham gum to hold it together and ethritol sugar (where’s the sweetness?!)
