Keto “Green Papaya” Salad

This salad is absolutely delicious! It substitutes green papaya for carb-friendly chayote squash. The squash is julienned on a mandoline (you can do by hand if you have a sharp knife) and then combined with chopped green beans, Thai chilies (use more or less depending on your preference), chopped dried shrimp (optional, but so good), scallions, thinly sliced radish, chopped cilantro and crushed peanuts. The salad is dressed with lime juice, fish sauce, sweetener, and minced garlic. The tart, sweet, crunchy, spicy with crushed peanuts puts this side dish over the top!

  • Step 1

    Thinly julienne chayote squash on a mandoline. Place it in a medium-sized mixing bowl.

    Add chopped green beans (½” long pieces), minced thai chilies, chopped dried shrimp, sliced scallions, thinly sliced radish (cut on the mandoline) and chopped cilantro. Combine well.

    Combine the lime juice, fish sauce, Swerve and minced garlic together.

    Pour over the salad. Combine well. The salad can be served right away, but the flavor develops as it chills in the fridge for an hour. Stir well before serving to toss the dressing around. Top with crushed peanuts.
