Ingredients

  • Chia Seeds

  • Almond Milk

    Almond Milk

  • Maple Flavored Syrup by Lakanto

  • Raspberries

    Raspberries

    ⅓ cup

  • Cinnamon, Ground

    Cinnamon, Ground

    ¼ teaspoon

  • Vanilla Extract

    Vanilla Extract

Recipe Steps

  • Step 1

    Keep 5 small raspberries in the fridge for later and crush the remaining raspberries with the back of a fork.

    Add the almond milk to a sealable jar or serving dish with the chia seeds. Stir well to combine.

    Add the crushed raspberries, cinnamon, syrup and vanilla and stir well.

    Set aside for ten minutes to thicken a little then stir again. Cover and transfer to the fridge for a minimum of 2 hours but preferably overnight.

    Remove from the fridge and stir again. Top with the reserved raspberries to serve.

        How long is it good for in the fridge? and can you use ground or should you use whole chia seeds?

        I buy frozen raspberries from Hannafords when I want raspberries in anything. It’s good because they are mostly all whole berries and then u just grab a few since u can’t eat many on keto anyway, that’s what I do then u don’t have to buy a pint for 5$ and not eat them before they go to waste. :)

        I added almond flavoring and used English Toffee Sweet Drops that is a Stevia sweetener. It was delicious with a burst of flavors.
