Keto Sweet and Salty Furikake Walnuts
Having properly salted and seasoned food is essential to the Keto diet. I like to incorporate salted nuts into my diet to add electrolytes and healthy fats. If you are a fan of Asian flavors, you will love this sweet and salty furikake combination! These flavored walnuts are easy to make with very few ingredients. They last up to a week or longer in an airtight container, making it great if you need a quick snack.
Where can I find furikake?
You can find furikake at most grocery stores and your local Asian market. If not, it is available on large online retailers like Amazon.
What makes these sweet and salty?
The walnuts are coated with plenty of sea salt, furikake, and monk fruit sweetener to tie all the flavors together. The combination is quite addictive!
Can I use other nuts?
Yes! The macros would be different so calculate the macros separately if you want to use another nut, but almonds, macadamia nuts, and cashews would be delicious.
Why the low oven temperature for roasting?
I have found that the lower the oven temperature on nuts, the less likely they will go rancid later on (and it results in a more superior toasted flavor).

Step 1
Preheat an oven to 310 F. Start by combining the walnuts, 1 ½ tbsp avocado oil, coconut aminos, and kosher salt in a medium-sized bowl. Pour the walnuts onto a parchment-lined baking sheet.Step 2
Bake for 20 minutes, shaking the baking sheet halfway through to move around any nuts getting too browned.Step 3
Remove the nuts from the oven and place them back into the same mixing bowl as before. Add in 1 tsp avocado oil, monk fruit sweetener, and the furikake seasoning. Taste and adjust by adding some fine sea salt that will stick well to all the nooks in the walnuts. Allow cooling completely before placing in an airtight container.

Good!!! Would toast the walnuts 18 min. and use more soy sauce next time.

Can you use coconut oil or olive oil instead of avocado oil?

The directions mention kosher salt in step 1 but no measurement or listing in the ingredients. ETA: Delicious recipe and I left out the added salt. Not that I'm against the added salt, just found that I didn't need it. Used soy sauce instead of coconut aminos (too expensive just to mimic soy sauce). The first part of this recipe would be a great base to build other flavors.

I left out the sweetener for my husband and it still tastes good.
