Step 1
Grab a muffin pan and cover it with a kitchen towel. Place the glasses slanted into the muffin holes. Set aside.Step 2
Add the gelatin to bowl. add 3 tbsp of cold or room temperature water and whisk. Set aside for 5 minutes to bloom.Step 3
Add heavy cream to a sauce pan over medium heat. Mix in the vanilla, allulose, and bloomed gelatin. Stir continuously until the mixture begins to simmer. Drop the heat to low and allow to simmer for 1-2 minutes.Step 4
Transfer the heavy cream mixture to a container with a spout for easy pouring. Pour into the prepared glasses, ¼ cup each. Cool in the fridge for 4 hours at least, preferably overnight.Step 5
Once set, prepare the jelly mixture. Add the sugar-free jelly powder to a bowl or jug. Add the boiling water and whisk until dissolved. Whisk in 1 cup of cold water.Step 6
Pour over the panna cotta. Transfer to the fridge and set again for 4 hours at least. Once set, 1 tbsp of chopped strawberries into each glass. Garnish with a mint or basil leaf and serve!
