Easy One-Pan Keto Chicken Marsala

Chicken breast

Extra virgin olive oil

Butter

Mushrooms, raw

Whipping cream, extra heavy/gourmet, not whipped

Step 1
Cut the chicken breast in half horizontally. Add the olive oil and butter to a large pan and heat over medium-high heat. Season the chicken breast with salt and pepper on both sides and add to the pan.Step 2
Cook for 3-4 minutes. Turn each piece over and cook for another 2-3 minutes. The chicken will not be fully cooked through. Remove the chicken from the pan and set aside.Step 3
Slice the mushrooms. Peel and finely chop the onion and garlic. To the same pan, add the onions, garlic, and mushrooms and reduce the heat to medium-low. Cook for 12-15 minutes, stirring occasionally.Step 4
Roughly chop the basil leaves. Add the broth, wine, heavy cream, and basil to the pan and mix well. Cook over medium-low heat for about 15 minutes or until the sauce is reduced in half and slightly thickened.Step 5
Add the chicken breast and coat well with the sauce. Cook until the chicken is completely cooked, and its juices run clear. Taste and optionally add more salt or black pepper.Step 6
Transfer to serving plates. Garnish with some fresh basil and serve immediately. Enjoy!

Be careful. The chicken should be removed from the pan between steps two and three. It is returned to the pan at step 5 which is noted in the instructions but the instructions fail to tell you to set the chicken aside when that should be done.
