The Mediterranean Keto diet is a fantastic way to add beautiful Mediterranean flavors to your regular low carb meals. This easy Keto Mediterranean stir fry is a complete and filling dish for the entire family. You can use different cuts of meat and add some other low-carb vegetables to this dish. We have decided to serve everything with fresh spinach and some shredded parmesan, but it would also be perfect with roasted asparagus or mashed cauliflower. This dish can be stored in the refrigerator for a couple of days, making it an excellent recipe to prepare in advance.

Step 1
Peel and finely chop the onion. Finely chop the pepper and celery stalks. Heat the butter and olive oil in a large pan over medium heat. Add the onion, celery, and pepper. Cook for 15 minutes, stirring occasionally.Step 2
Meanwhile, cut the meat into bite-sized pieces. Season with salt and pepper. Let it sit for 10 minutes.Step 3
Add the meat to the pan. Add the bay leaves and mix well. Reduce the heat to low and cover with the lid. Cook for 1 hour or until completely tender. Stir occasionally.Step 4
Transfer the meat to serving plates. Serve with spinach and shredded parmesan. Optionally, drizzle with olive oil before serving.
