Keto Harissa Bacon & Eggs
Breakfast is my favorite meal of the day, but I tend to leave more complicated breakfasts like bacon and eggs for the weekend when I have more time. Simply because it involves being fairly attentive (eggs in a skillet, bacon in the oven and so on). I love baking everything on a sheet tray because it requires less steps and clean up. This could easy be a weekday routine!

Ingredients
Bacon
4 medium slice
Spinach
2 cup
Olive Oil
1 teaspoon
Kosher Salt
⅛ teaspoon
Black Pepper
⅛ tsp
Egg
2 large
Avocados Raw
½ fruit without skin and seeds
Harissa Simmer Sauce by Saffron Road
½ serving
Crushed Red Pepper Flakes by 365
¼ tsp
Scallions
1 tablespoon
Recipe Steps

Step 1
Preheat oven to 400 F. Place 4 strips of bacon on a quarter sheet tray. Bake for 12 mins.Step 2
In the meantime, toss spinach with oil, salt and pepper.Step 3
Remove bacon from the oven. Place two equal piles of spinach on top of the bacon, leaving a small indent in the center. Crack one egg onto each spinach pile. Bake for 7-9 minutes depending on how you like your eggs cooked. I like runny eggs so I tend towards the lesser time.Step 4
Prepare toppings like scallions, harissa, avocado and red pepper flakes to garnish your plate with and serve!

I wish we could edited these recipes so we can remove some ingredients that we don’t like. I find a lot of these recipes could be altered to our liking.

Wonderful recipe. Consider a cast iron skillet if you make just a single serving. I had some truffle infused oil and tossed the spinach in it, it was great! I had it as a Sunday brunch!

Loved this. I cooked the eggs for 9 minutes and they were pretty much done “hard” will do 7 minutes next time. The spinach fried in bacon fat is so good. I could eat it all day. Used sriracha instead of harissa.

This was pretty good. I'm not sure if the extra condiments like harissa sauce, avocado etc are included in the macros.

The avocado for sure is (look at the fiber value). Don't know about the harissa.

Prettty good and yes saved on clean up i kinda put it all together and baked it for 20 minutes ..it was delicious. i didn't have harrisa sauce or red pepper..

Pretty simple, I cooked bacon in microwave to save on time during busy mornings. Turned out great
