Keto Christmas Soup

What better heart-warming dish to serve on holidays than this Keto Christmas soup? This recipe can be prepared in under 40 minutes using a couple of ingredients. It contains meaty red kielbasa, turnips, spinach, red wine, chicken broth, and garlic. This soup screams Christmas with its red, green, and golden combo. The flavors are punchy and warm yet palate-cleansing.

How to prepare this Keto Christmas soup?

This soup is super easy to make and can be prepared in under 40 minutes. Start by slicing the kielbasa into ¼ inch slices and cooking it until golden and has rendered a lot of its fat. Transfer the sausage to a plate, and discard most of the fat, leaving about 1 tbsp in the pot. Add the minced garlic and cook until fragrant, then, deglaze the pot with red wine. Finally, add the chicken broth and cubed turnips and let simmer for 20 minutes. Add the spinach and let it wilt. Divide the cooked kielbasa into bowls, and pour the soup over it.

How can you customize this recipe?

This recipe is so forgiving and can be customized to your liking. Feel free to swap the kielbasa with chorizo, Italian sausage, bratwurst, or andouille. You can even use tofu sausage for a vegan version. As for the spinach, substitute it with kale, collard greens, or Swiss chard.

Is this recipe suitable for leftovers?

Absolutely! With holiday dishes, you almost always have leftovers. This is why having Keto Christmas recipes that are just as good the following days is necessary. You can store the whole soup in one large container in the fridge, serve yourself a portion, and microwave until warm. You can also keep it in individual containers for meal prep.
