How to prepare this Keto Christmas soup?
This soup is super easy to make and can be prepared in under 40 minutes. Start by slicing the kielbasa into ¼ inch slices and cooking it until golden and has rendered a lot of its fat. Transfer the sausage to a plate, and discard most of the fat, leaving about 1 tbsp in the pot. Add the minced garlic and cook until fragrant, then, deglaze the pot with red wine. Finally, add the chicken broth and cubed turnips and let simmer for 20 minutes. Add the spinach and let it wilt. Divide the cooked kielbasa into bowls, and pour the soup over it.
How can you customize this recipe?
This recipe is so forgiving and can be customized to your liking. Feel free to swap the kielbasa with chorizo, Italian sausage, bratwurst, or andouille. You can even use tofu sausage for a vegan version. As for the spinach, substitute it with kale, collard greens, or Swiss chard.

Slice the kielbasa into ¼ inch (1/2 cm) thick pieces on the bias. Mince the garlic, cut the turnips into ½ inch (1cm) cubes, and roughly chop the spinach. Set them aside.Step 2
Place a pot or Dutch oven over medium-low heat. Add the kielbasa and cook until browned and well rendered, for about 10 minutes. Transfer the kielbasa to a plate. Discard the rendered fat, reserving one tablespoon in the pot.Step 3
