Keto Chicken and Waffles
Keto Chicken and Waffles is a great way to satisfy both sweet and savory flavors! Delicious, golden brown waffles are topped with crispy Low Carb and gluten-free chicken tenders. Each waffle is topped with plenty of grass-fed butter and maple syrup with the chicken on top, of course!
Why does the recipe list ¼ cup of lard?
The recipe lists ¼ cup of lard because the fat pickup during the frying process of the chicken tenders is about half. So we did this for nutritional purposes. However, in the recipe instructions below, you will see to add ½ cup of lard to the pan.
How can I save leftover chicken and waffles?
The chicken and waffles hold up wonderfully to being frozen. Simply place them into a freezer zip lock bag and then into the freezer. Once ready to reheat, put them in the microwave or use an air fryer to crisp them both up.
What kind of butter should I use for the waffles?
We like to use grass-fed butter as it is higher in omega 3 fatty acids and vitamins.

Step 1
To begin, plug in small waffle iron to preheat it.Step 2
Combine the dry ingredients, including the almond flour, granulated sweetener of choice, baking soda, and kosher salt.Step 3
Next, combine the liquid ingredients, including the eggs, almond milk, vanilla extract, and apple cider vinegar.Step 4
Pour the liquid ingredients into the dry ingredients and whisk well to combine. Use the batter immediately.Step 5
Brush the iron with melted butter using a silicone brush.Step 6
Pour enough batter to cover the bottom of the iron barely. Cook waffles for 5-6 minutes, erroring on the side for more time. If the waffles will not come out of the iron easily, give them another minute.Step 7
Remove the waffle from the iron by using a rubber spatula. Gently lift the waffle from the iron and directly pull the waffle up. This method will help the waffle not to break. Set the waffle aside on a plate and repeat with the remaining batter. The recipe should make 5-6 waffles.Step 8
Once the waffles are almost finished (or, if you can multitask in the earlier steps). Whisk the eggs with 1 tsp kosher salt.Step 9
Combine the almond flour with 1 tsp kosher salt on a plate.Step 10
Place the raw chicken tenders into the eggs and use tongs to coat them.Step 11
Use the tongs to transfer the egg-coated chicken tenders to the plate with the almond flour. Coat them well on both sides and repeat with any remaining chicken tenders.Step 12
Preheat a large, heavy-bottomed skillet over medium heat until hot. Add in ½ cup tallow (or lard) and allow it to melt.Step 13
Add in the chicken tenders and cook on the first side until golden brown.Step 14
Flip and repeat on the other side until the chicken is cooked through.Step 15
Top each waffle with butter and then one or two chicken tenders. Drizzle with Keto maple syrup.
