Some people will trim the tops off the artichokes, but it isn’t entirely necessary. Feel free to prep them this way if you would like. Whole artichokes can be rinsed well under running water and then placed directly into boiling water to cook without any prior preparation.

Peel off each leaf, then dip it into the lemon vinaigrette. Place each leaf between your teeth and scrape off the inner layer. It is delicious! Once you get to the center (the heart), you can remove the hairy thistle and dip the heart into the dressing.

Step 1
Prepare a large pot of water and bring it to a boil. In the meantime, wash the artichokes very well under running water. Making sure to pull the leaves back to rinse any dirt or debris stuck in between the leaves.Step 2
Drop the artichokes into the boiling water making sure they are fully submerged. Boil for up to 30 minutes or until softened. You can test the artichokes by poking the stem with a paring knife. If it goes through easily, they are done.Step 3
While you are waiting for the artichokes to cook, prepare the dressing. Combine the freshly squeezed lemon juice and olive oil in a bowl. Season the lemon juice mixture with the kosher salt and pepper. Serve the dressing with the hot artichokes!
