Ingredients

  • Water

  • Step 1

    Add the water to a small pan along with the mint leaves and erythritol. Bring the mixture to a boil, then simmer for 3-4 minutes to infuse.

    Strain the water into a separate bowl, and discard of the mint leaves.

    Add the lime juice and zest to the bowl, stirring well to combine.

    Transfer the mixture to a shallow, freezer proof tray and freeze for 40 minutes until semi- frozen.
  • Step 5

    Remove the semi-frozen mixture from the freezer and roughly separate the ice crystals with a fork. Return to the freezer for a further 20 minutes, then remove and loosely churn again, breaking up the ice. Return to the freezer for a final 20 minutes.

    Divide the crushed ice mixture between 4 ramekins or glasses to serve.
