Keto Kimchi Fried Rice
Kimchi fried rice is so spicy and delicious. Even better when it is low in carbs! I used store bought frozen cauliflower rice for this and heated it minimally in the microwave to break it up before adding it to the pan.

Ingredients
Butter
2-½ tablespoon
White Onion
¼ small
Minced Ham
½ cup, cut pieces
Kimchi (kim Chee)
1 cup
Cauliflower Rice, Frozen
10 ounce
Tamari Sauce
2 teaspoon
Sesame Oil
1 teaspoon
Raw Egg

Step 1
Heat cauliflower rice in the microwave on HIGH for 2 minutes to break it up. Dice the white onion and kimchi into a small dice.Step 2
In a medium non-stick saute pan, heat the skillet until HOT. Add 2 T butter and heat until melted. Add the white onions and cook until nicely browned. Add a pinch of salt to the onions and stir.Step 3
Add the kimchi and saute for 1-2 minutes until liquid has evaporated.Step 4
Add the ham and cook until it’s starting to turn brown.Step 5
Add the cauliflower rice. Allow it to cook in the pan for 1-2 minutes without disturbing it. This will allow the rice to brown and become fried. Stir it all together and cook it undisturbed again for 1-2 minutes.Step 6
In the meantime, add ½ T butter to a small non-stick saute pan and heat until pan is hot and butter is melted. Add the eggs and cook until the desired doneness is achieved. I like my eggs sunny side up and runny. To cook them this way, I cook the eggs over medium heat until the whites start turning opaque. I then cover the pan with a lid and cook on low for about 1 minute until the yolks start turning opaque but are still runny in the center.Step 7
Fill three bowls with rice and top each with egg and thinly sliced seaweed sheets!

It’s a fermented vegetable(Korean side dish). Check your international aisle of your food market for it.

I couldn’t work out where the sesame oil and tamari went in but I added them as seasoning at the end. Delicious - the fried egg is a master stroke!
