Keto Cabbage Roll Skillet
One of the best and most popular dishes of the “old country” may be cabbage rolls, a.k.a. stuffed cabbage. This Keto cabbage roll skillet makes the delicious original recipe easier to make in considerably less time. Instead of stuffing delicate cabbage leaves that can tear or overcook, you’ll shred green cabbage and cook it down in a skillet until it’s super tender. The rest of the cabbage roll filling is made with ground beef, Low Carb tomato spice, plenty of spices, and a finishing touch of melted butter. This is an excellent Keto skillet recipe to feed a table of people family-style. You could also make meal prepping a breeze by utilizing this recipe.
Make sure you have extra salt on hand
In this Keto skillet recipe, you’ll need extra salt that isn’t listed in the ingredients. Have up to 1 tablespoon or more of extra salt to use in step 1. This extra salt gets rinsed away later and won’t be consumed, so it’s not listed in the recipe ingredients. Have even more salt on hand if you’d like to add more salt to the skillet to your taste.
Why do I add so much salt to the cabbage?
Salt is considered hydrophilic. This means it can draw moisture out of the air; or, in this case, food. Adding lots of salt to green cabbage and then massaging it into the fibers will help withdraw excess water from the cabbage that you don’t want in the recipe. You don’t necessarily have to massage the salt with your bare hands, but doing this speeds up the process significantly and ensures you get all the cabbage coated in salt.
Is tomato sauce Keto?
Plain canned tomato sauce (not jarred sauce used for pasta sauce) has few ingredients. That makes canned tomato sauce a simple ingredient you can include in your Keto diet. Tomatoes do naturally have some carbs, which carry over to the sauce. When portioned and used in moderation, tomato sauce is a friendly Keto ingredient. Feel free to use homemade tomato sauce as well if you know the macros.

Step 1
Start by thin-slicing green cabbage either by hand or with a kitchen mandolin and adding the cabbage to a large mixing bowl. Cover the cabbage with about 1 tablespoon of salt or more (not listed in the ingredients). Use one hand to begin mixing and massaging the salt into the cabbage until you feel the cabbage begin to wilt. Leave the wilted cabbage aside to continue extracting excess moisture in the bowl.Step 2
Next, use a wooden spoon to break up all the ground beef in a large skillet or saute pan. Douse the ground beef in the olive oil, then heat the pan over high heat. Mix the beef with the olive oil until the beef starts browning. You can cover the pan with a lid to help finish browning the beef and collect some juices. After browning the beef, stir all of the listed seasonings into the skillet.Step 3
Reduce the heat on your stove to medium heat, and pour the tomato sauce into the skillet. Stir the ingredients while the tomato sauce begins to simmer. Cover the skillet with a lid, reduce the heat to low, and let the ingredients simmer for about 5 minutes. While that’s simmering, rinse and drain all the salt from your green cabbage using a strainer or colander. Once clean, stir the cabbage into the skillet.Step 4
Once again, cover the skillet with a lid. Simmer the skillet on low heat for another 10-15 minutes. For doneness, the cabbage needs to be totally translucent including the thicker white pieces. Once the skillet has reached doneness, add the butter cut into tablespoon pieces. Stir all the butter in until it has melted and coated the beef and cabbage. Serve hot.

Delicious! This definitely hit the spot. I didn't do the salt on the cabbage part, I just simmered on low for longer until the cabbage was very translucent. Very tasty and the whole famil loved it.

Loved it! Comfort food. May try ot with Rotel tomatoes and green chiles or add a little saurkraut next time.
