Low Carb Green Halloumi Salad
This simple green salad is loaded with flavor and texture from peppery arugula, crisp scallions, creamy avocado, cool cucumber, crunchy pumpkin seeds and golden fried halloumi.
This is a great vegetarian summer lunch option or light dinner.

Ingredients
Haloumi Cheese by Papouis
4-½ ounce
Arugula
2 cup
Scallions
2 medium - 4 1/8" long
Cilantro
2 tablespoon
Olive Oil
1-½ tablespoon
Pumpkin Seeds
1-½ tablespoon, whole pieces
Cucumber
1 cup
Avocado
1 each
Lime Juice, Fresh
1 teaspoon
Lime Zest
1 teaspoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Slice the halloumi into two even strips. Arrange in a dry skillet over a medium/high heat and cook for a few minutes on each side until golden.Step 2
Whilst the halloumi is cooking, thinly slice the avocado, dice the cucumber and finely slice the scallions. Add to a large serving bowl along with the arugula. Season with a little salt and pepper and toss to combine.Step 3
Add the olive oil, lime juice and zest to a small bowl. Stir to combine.Step 4
Top the salad with the cooked halloumi and scatter over the pumpkin seeds and fresh cilantro. Drizzle with the lime dressing to serve.

Oh halloumi how do i love thee!!! It’s the perfect cheese between salty crunchy buttery and no butter used thank you for this delicious recipe
