    Finely dice the red onion and mince the garlic. Set them aside. Season the chicken thighs with salt and pepper on both sides.

    Add the olive oil to a pan over medium-high heat. Once hot, add the chicken thighs skin side down. Cook for 3-5 minutes until golden. Remove from the pan and set aside.

    Drop the heat to medium then add the butter. Once melted, add the onions and saute for 3 minutes until softened. Add the minced garlic and cook for 1 minute.

    Deglaze with the white wine and simmer for a few minutes. Add the thyme, tarragon, and chili flakes. Pour the chicken broth and mustard. Stir to combine.

    Return the seared chicken thighs skin side up. Bring to a simmer and drop the heat to low. Cover and cook for 20-30 minutes until no longer pink.

    Didn't have the wine and it was totally fine without. I used a bit of white wine vinegar and heavy on the tarragon.

      Super happy with this recipe!! I substituted fennel seed for the tarragon and then served it over cauliflower rice. Loved it! Saved and doing it again soon!!

        Delicious! I substituted cream cheese for the heavy cream and used herbs de Provence instead of tarragon.
