Keto Mojito Cocktail with Coconut, Mint and Lime
A deliciously refreshing Keto rum drink made with coconut cream, fresh mint leaves and lime juice, perfect for a hot summer's day! Keto alcohol is possible, people! Erythritol and a sugar free vanilla drinks syrup are both used to balance the acidity from the limes, and can be adjusted to your liking by adding more or omitting entirely if you prefer a sharper flavozr.
But “is rum Keto?” I hear you say?
The short answer is yes! Since pure forms of alcohol like rum, gin, whiskey, tequila and vodka are all completely free of carbs, and can be enjoyed neat, or mixed with a zero sugar mixer for more cocktail options. The problem isn’t the alcohol, it’s more about the added mixers which contain the carbs you need to watch out for. The added bonus in this Keto alcohol drink is the addition of coconut cream which gives the added boost of healthy fats while the soda water brings the fizz and freshness.
What type of rum should I use?
You can use any white rum for this cocktail or try making it with coconut flavored rum for a more intense tropical flavor.
Can I use another alcohol other than rum?
If you don’t have rum to hand, or you’re just not a fan, you can make this with gin or vodka as a substitution.
I don’t drink alcohol, can I still make it?
No alcohol, no problem! Make this a virgin coco-mojito by omitting the rum entirely and topping with a tad more sparkling water.
Do I need to use a sugar-free syrup to make this?:
If you don't have a sugar free syrup, you can add another teaspoon of erythritol or sweetener of choice. The syrup used is what is typically added to flavor coffees.

BARISTA French Vanilla 1 Litre Zero Calorie Sugar Free Coffee Syrup
2 tbsp
Organic Coconut Cream
5 fl oz
Rum
1.5 fl oz
Lime juice, fresh
1 each - juice from one lime
Sparkling water

Crushed Ice

Step 1
In a mortar, add the mint leaves and erythritol. Use the pestle to lightly muddle together. The mint leaves will gently break down and release their oils.Step 2
Add the crushed ice, lime juice, mint and erythritol mixture to a drinks shaker or large glass jar. To that, pour in the white rum, vanilla syrup and coconut cream. Shake well until all the ingredients are mixed together.Step 3
Divide the mixture equally into 2 serving glasses and top with soda water. Serve immediately. Ensure the soda water is added after the mix has been poured, as shaking the mix with the soda water will create a big mess!
