These fat bombs are a nice change from the many chocolate and nut heavy ones out there. In addition to a tiny amount of blueberries for a fruity taste, they are coated in shredded coconut for texture. This recipe is written without sweetener, but you can add stevia drops to taste or a little erythritol. Since these fat bombs are no bake and egg free, feel free to taste along the way and add sweetener accordingly.

Ingredients

  • Cream Cheese, Brick

  • Coconut, Dried, Shredded Or Flaked, Unsweetened

    Coconut, Dried, Shredded Or Flaked, Unsweetened

    3 tablespoon, shredded

  • Step 1

    Slightly melt coconut oil and mix together coconut oil, cream cheese and almond butter in a bowl with a spoon or (ideally) a hand mixer until smooth.

    Fold in blueberries, vanilla extract, and sweetener to taste if you plan on using any.

    Add shredded coconut to a small bowl or container. Roll the blueberry mixture into 8 balls and carefully roll a ball into the shredded coconut, pressing the coconut slightly into the ball.

    Continue with the remaining balls. Place the fat bombs on a piece of parchment

    Refrigerate for at least an hour before enjoying.

      Very good. I enjoy any of the Keto fat bomb recipes. Depending on which one I make I typically will spread it on my toast. Good way to start the morning!

        Oh my goodness..these are dangerous! Added the coconut right in with other ingredients. Came out fine. Nect batch maybe toady coconut and roll in cacao powder.

          It says it makes 8 serving but you may as well say 7 since you will be licking the bowl and your fingers after making these 🤣 Soooo goood!

            These are so good! I just mixed everything up together except the blueberries which I folded in. I added a bit of stevia and dropped in a few sugar free chocolate chips.. yummy!

                I toasted the coconut then added right to the mixture instead of rolling the balls. Taste great, definitely will make again.

                  Skipped the blueberries, added stevia, and rolled in some cacao nibs along with the coconut. Next time, I will blend in the nibs when mixing the fats.

                    Excellent. My first batch was wonderful. I used 3/4 teaspoon of Swerve Gold Brown Sugar for a sweetener. I made 8 and minus the coconut flakes they weighed in between 20 - 23 grams. I will definitely make this agin and play with basic recipe. I have a macadamia, coconut, cashew butter blend that I think will work but will have to up the sweetener since it is not as sweet as almond butter. We’ll see how the macros pan out.                         You could give it a try but be sure to copy the recipe first and then edit it to account for the coconut cream. I will change the macros.

                            I put mine in the freezer for 10 minutes let it firm up and then works to roll them.

                                I added 1 dropper of liquid vanilla stevia. Had to refrigerate before rolling. Then froze for a little while. My husband and I both thought they were awesome! A delicious way for me get all of my fat for the day.

                                  These are delicious. For this 8 svg recipe I make 16 balls and freeze them. I defrost for 30 sec or so until they’re slightly soft again. My nighttime snack!

                                    Amazing. Easy to make and delicious. I used fresh blueberries and added 3 tsp of erythritol.
