    Preheat your oven to 400F/200C. Finely chop the onion and mince the garlic. Add 2 tbsp butter to a skillet over medium heat.

    Add the onion to the skillet and cook for 2-3 minutes. Add the minced garlic and cook for 30 seconds until fragrant. Transfer to a bowl.

    Slice the beef tenderloin into 4 equal steaks. Season the steaks with salt and pepper on both sides. Add 2 tbsp of butter to a cast iron skillet over medium-high heat. Sear the steaks for 3 minutes on each side until browned.

      After being unable to find almond meal I substituted ground pork rinds and knocked it out of the park. We cooked the steak whole and then portioned it out. The cook times are spit on. This was a rich and delicious way to end the weekend. I can’t wait for tomorrow!
