    Dice the onion, bell pepper, and tomato and set them aside. Crack the eggs into a bowl and pour in the heavy cream. Season with ¼ tsp salt and black pepper and whisk well.

        I have been making these a lot. My son taught me to add a couple slices of zucchini or yellow squash diced up and cook them first, then start adding my other veggies and last my beaten eggs. I use vanilla flavored almond milk and it adds a little yummy taste to the whole dish. And yep, the son is keto all the way lol.

          Absolutely delicious! Only thing I’d recommend is to cut the salt in half or omit it entirely. Will definitely make again!
